Ingredients

  • 4 to 5 ripe avocados
  • 1 to 2 limes
  • Pop’s All-Purpose Seasoning, to taste (about 1 teaspoon recommended)
  • 1 small tomato, finely diced (optional)
  • ¼ cup onion, finely chopped (optional)

Instructions

  • Halve, pit, and scoop the avocados into a bowl.
  • Mash with a fork to desired consistency.
  • Add lime juice and mix well.
  • Stir in tomato and onion, if using.
  • Season with Pop’s All-Purpose Seasoning to taste and combine.

Serving

Serve immediately with tortilla chips.

Tips

  • Use ripe avocados for the best texture and flavor.
  • Add lime juice gradually and adjust to taste.
  • For a smoother guacamole, mash more thoroughly; for chunkier, mix lightly.

  • 1 (15 oz) can black-eyed peas, drained and rinsed
  • 1 (15 oz) can hominy, drained and rinsed
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (10 oz) can Rotel (diced tomatoes with green chilies), undrained
  • 2 to 3 green onions, chopped
  • 1 bottle Italian dressing
  • Pop’s seasoning, to taste

Instructions

  • In a large bowl, combine the black-eyed peas, hominy, black beans, and Rotel.
  • Add the chopped green onions and mix well.
  • Pour in the Italian dressing and stir until evenly coated.
  • Season with Pop’s seasoning to taste.
  • Cover and refrigerate overnight to allow flavors to develop.

Serving

Serve chilled with corn chips or your favorite chips.

  • Fresh mozzarella, sliced
  • 1 large ripe tomato, sliced
  • Fresh basil leaves
  • Pop’s All-Purpose Seasoning, to taste
  • Balsamic vinaigrette glaze

Instructions

  • Arrange tomato slices on a serving platter.
  • Top each tomato slice with mozzarella.
  • Season lightly with Pop’s All-Purpose Seasoning.
  • Add a fresh basil leaf to each piece.
  • Drizzle with balsamic glaze.
  • Chill for at least 30 minutes before serving.

Serving

Serve cold or lightly chilled as an appetizer or side dish.

  • 2 green tomatoes, sliced
  • Milk (for dipping)
  • Butter (unsalted Kerrygold or preferred brand)
  • Flour
  • Breadcrumbs
  • Pop’s All-Purpose Seasoning, to taste

Instructions

  • In a shallow bowl, combine flour, breadcrumbs, and Pop’s All-Purpose Seasoning.
  • Dip tomato slices in milk, allowing excess to drip off.
  • Coat tomatoes evenly in the dry mixture.
  • Heat butter in a skillet over medium heat.
  • Fry tomatoes until golden brown on both sides.

Serving

Serve warm as an appetizer or side dish.

  • 6 jalapeño peppers, halved and seeded
  • 1 package frozen cooked shrimp (small or medium), thawed
  • 8 oz cream cheese, softened
  • Thinly sliced bacon
  • Pop’s All-Purpose Seasoning, to taste

Instructions

  • Preheat oven to 275°F (135°C). Line a baking sheet with foil and place a rack on top.
  • In a bowl, mix the softened cream cheese with Pop’s seasoning to taste.
  • Fill each jalapeño half with the cream cheese mixture.
  • Top each with 2 or more shrimp, depending on size.
  • Place a strip of bacon on top, pressing lightly to secure (or wrap around the pepper if preferred).
  • Arrange the poppers on the rack and bake for 35 minutes, or until the bacon is cooked and the peppers are tender.

Serving

Serve warm.

Ingredients

  • 1 bag shredded cheese (any kind)
  • 8 eggs
  • 1 package cubed ham (or bacon, sausage, chicken, etc.)
  • 1 package deep dish frozen pie crusts (2 crusts)
  • 1 can evaporated milk
  • 1 teaspoon all-purpose seasoning (or to taste)
  • Optional: chopped tomatoes, mushrooms, spinach, onions, or other veggies

Instructions

  • Preheat oven to 350°F.
  • Divide the ham (or protein) evenly between the two pie crusts.
  • Sprinkle half the cheese into each crust.
  • In a bowl, whisk together the eggs and evaporated milk.
  • Stir in seasoning to taste.
  • Pour the egg mixture evenly over each pie.
  • Bake for 40 minutes.
  • Let cool for 10 minutes before serving.

Tips

For a lower-carb option, skip the crust and bake the mixture in a greased pie dish.

Southern Skillet Blackened Fish with Lemon Butter Sauté

Ingredients

  • 2 fish fillets (grouper, mahi-mahi, or preferred fish)
  • ½ to 1 stick unsalted or garlic herb butter
  • 1 onion, thinly sliced or chopped
  • ½ cup fresh mushrooms, sliced
  • 1 to 2 lemons
  • Pop’s All-Purpose Seasoning, to taste

Instructions

  • In a pan over medium heat, melt the butter. Add the onion and mushrooms, and sauté until softened.
  • Squeeze the juice of 1 to 2 lemons into the skillet. Stir in about 1 teaspoon of Pop’s seasoning and let the mixture simmer for 5 minutes. Remove from heat and let it cool until just warm.
  • Transfer the sauté mixture to a plastic container or resealable bag. Add the fish fillets and coat evenly. Cover and refrigerate for 30 minutes to marinate.
  • Remove the fish from the marinade and season both sides with Pop’s.
  • Heat a cast iron skillet over medium-high heat. Blacken the fish for about 3 minutes per side, or until blackened and cooked through.
  • Pour the reserved lemon butter mixture into the skillet and heat it through. Serve immediately.

Serving

Serves 2; double the recipe as needed.

  • 2 salmon fillets
  • Pop’s All-Purpose Seasoning
  • 1 lemon
  • Olive oil

Instructions

  • Preheat oven to 400°F (200°C).
  • Line a baking sheet with foil and lightly brush with olive oil.
  • Pat salmon fillets dry and place on the prepared baking sheet.
  • Lightly brush the tops with olive oil.
  • Squeeze fresh lemon juice over the fillets.
  • Season with Pop’s All-Purpose Seasoning to taste.
  • Bake for 10 to 12 minutes, or until salmon flakes easily with a fork.

Serving

Serve warm with your choice of sides.

Maple Bacon-Wrapped Venison

Ingredients

  • Sliced and cubed (tenderized) venison, each piece approximately 3 to 4 inches
  • 1 package maple bacon (Black Label brand preferred)
  • 1 cup Dale’s Steak Sauce (low sodium)
  • ½ cup Italian dressing
  • Pop’s All-Purpose Seasoning
  • Toothpicks

Instructions

  • Cut bacon slices in half (or leave whole if preferred). Wrap each piece of venison with bacon and secure with a toothpick.
  • Place the wrapped venison in a large container with a lid. Pour in Dale’s Steak Sauce and Italian dressing, using enough of both to coat all pieces generously. Close the container and gently shake to coat the meat evenly.
  • Marinate in the refrigerator overnight for best flavor. If possible, shake the container occasionally to ensure even coverage.
  • Remove from the refrigerator and lightly sprinkle each piece with Pop’s All-Purpose Seasoning before cooking.
  • Grill over medium heat for about 3 minutes per side, or until the bacon is crisp and the venison reaches your desired doneness. Adjust cooking time for larger pieces.

Serving

Serve hot off the grill with your favorite sides. Enjoy!

Instructions

  • Drain the tofu and press out excess moisture. Cut into 1-inch cubes.
  • Heat olive oil in a skillet over medium heat.
  • Add tofu cubes and cook, turning occasionally, until lightly browned on all sides.
  • Season with Pop’s All-Purpose Seasoning to taste.

Serving

Use in wraps, salads, grain bowls, or as a meat substitute. Also enjoyable as a snack on its own.

Tips

  • Pressing tofu thoroughly improves texture and helps it brown better.
  • For extra crispiness, allow the tofu to cook undisturbed for a few minutes between turns.

  • Red potatoes and small Yukon Gold potatoes
  • Olive oil
  • Pop’s Seasoning

Instructions

  • Preheat oven to 425°F.
  • Wash potatoes and cut into 1-inch pieces. No peeling needed.
  • Line a baking sheet with parchment paper. Toss potatoes with olive oil and Pop’s Seasoning until evenly coated.
  • Arrange potatoes in a single layer, leaving a little space between each piece. Place cut sides down.
  • Roast for 20 to 30 minutes, or until fork tender and golden brown around the edges.

Tips

Cheesy Roasted Potatoes variation: prepare potatoes as directed but bake them in a casserole dish instead of on a baking sheet. After baking, remove from the oven and lightly mash the potatoes with a fork. Stir in shredded cheddar cheese and ½ to 1 cup sour cream, to taste. Spread the mixture evenly in the dish, top with more shredded cheese, and bake for 15 more minutes, or until hot and bubbly.

  • Add the Brussels sprouts and toss to coat evenly.
  • Season with Pop’s seasoning to taste.
  • Cook for 6 to 10 minutes, stirring occasionally, until browned and tender.
  • Drizzle with balsamic glaze and stir to coat. Cook for an additional 1 to 2 minutes.

Serving

  • For extra crispiness, avoid stirring too often to allow the sprouts to brown.

  • 1 (7.5 oz) can Zing Zang Bloody Mary Mix
  • 1 to 2 shots Tito’s Vodka
  • ½ teaspoon Pop’s All-Purpose Seasoning
  • 1 lime
  • Ice
  • Hot sauce (optional)
  • Optional garnishes: olives, celery sticks, cooked bacon, dill pickles

Instructions

  • In a shaker, combine Bloody Mary mix, vodka, and seasoning. Shake well.
  • Rub a lime wedge around the rim of a glass, then coat the rim with seasoning. Fill the glass with ice.
  • Pour the mixture into the prepared glass.
  • Add desired garnishes and serve immediately.
